Makes 1 Loaf
1/2 cup butter, softened
2/3 cup Madhava Organic Agave Nectar
1¾ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cup mashed bananas
½ cup plain yogurt
1 teaspoon vanilla extract
½ cup pecans or walnuts (chopped)
Preheat oven to 350 degrees.
Combine butter and Madhava Organic Agave
Nectar in a bowl and beat with a hand mixer. Add in eggs beating
well. Sift together flour, baking soda, and salt. Slowly add into
banana mixture until just combined, being careful not to over mix.
Add bananas, yogurt and vanilla until well mixed. Stir in
nuts if using.
Grease a 9" x 5" loaf pan and line with
parchment, pour in batter and even out the
Bake for 50-60 min or until cake tester comes
out clean. Cool 10 min in loaf pan and then remove to cool
completely on a wire rack. Will brown more than bread made
with granulated sugar.
